Vegetarian Meals Week 4

Greek Tortellini Salad
Note: It should have been amazing but something seemed to be missing.  Next time I will try more cheese and use the juice from the can of olives as part of the dressing.  
Stacked Roasted Vegetable Enchiladas
Note: I will now for always stack my enchiladas rather than roll them. So much easier! I used chihuahua cheese instead of monterery jack.  Needed much more cheese and a little more sauce than what it called for.  I will try another recipe before settling on these vegetarian enchiladas.  
Roasted Potato Frittata
Note: Makes a better breakfast than dinner
